Make room for ‘shrooms! This stellar side features a mix of mushrooms, roasted to perfection. It’s the perfect complement to poultry, fish, or vegetarian dishes. And it’s a snap to make.

This recipe makes 4 servings
Ingredients:
  • • 1 pound mixed mushrooms (such as maitake, king trumpet, and shiitake mushrooms), roughly chopped into quarters or halves
  • 2 tablespoons olive oil
  • • 1 teaspoon salt
  • • ½ teaspoon garlic powder
  • • ¼ teaspoon black pepper
Preparation:

Heat oven to 450˚.

Add mushrooms to a large bowl and toss with oil.

In a small bowl, mix the salt, garlic and pepper. Add the seasonings to the bowl with mushrooms and toss to evenly coat. Lay the mushrooms out on a baking sheet and mist the tops with extra oil spray.

Roast mushrooms in the oven for about 20 minutes, stirring halfway through. Note: They will generate a lot of water at the 10-minute mark, but that’ll be absorbed when they’re done roasting. If you’d like them more well done, cook for an extra 5 minutes. Season with salt and pepper to taste, and garnish with optional minced herbs.
