Hit with a cookie craving? This no-sugar-added version is a delicious choice if you’re trying to tame your sweet tooth. The flavor comes from naturally sweet bananas and pecans as well as the cinnamon and vanilla.

This recipe makes 16 Servings
Ingredients:
  • ¾ cup chopped pecans, plus extra for topping
  • ¾ cup rolled oats (instant or quick cooking)
  • 3 ripe bananas
  • 1 teaspoon cinnamon
  • 1 tablespoon vanilla extract
  • Pinch salt
Preparation:

Preheat oven to 350˚ and line a baking sheet with parchment paper or coat with non-stick oil spray.

Blend pecans in a food processor until they are the same consistency as crumbs. Pour blended pecans into a large bowl, add oats and combine until well-mixed. Set aside.

Blend bananas, cinnamon, vanilla extract and salt in food processor until bananas become smooth and liquid. Add to oat mixture and combine to form a batter.

Scoop a heaping teaspoon of batter, one at a time, onto the baking sheet. Gently push down the center of each cookie and top with a few pecan pieces. (To prevent your fingers from sticking, dab them in water or mist with cooking spray.)

Cook for 10 minutes and remove from oven. Let cool and enjoy.
