I’m obsessed with this simple recipe and my kids flip for it, too. I wasn’t sure what to call it—it tastes like a sweet, rich peanut butter–coconut cookie dough, but it has a thinner dip-like consistency, so I landed on “Coconut Cookie Dough Dip” (which sounds a little crazy, but fun, haha). It’s perfect for an after-school snack, an energy boost before a sporting event, or a weekend slumber party. If you have family members with nut allergies, simply swap in sunflower butter.  I tend to serve it with sliced apples, bananas and whole strawberries for dunking, but you can certainly choose your own dipper-adventure. It’ll keep in the fridge in a sealed container for up to three weeks.

Pro tip: Mist your measuring cup with nonstick oil spray before adding your PB (same with the tablespoon for the honey) so they slide out more easily.

This recipe makes 1 cup
Ingredients:
  • • ½ cup creamy peanut butter
  • • ½ cup unsweetened vanilla almond milk
  • • 1 tablespoon honey
  • • 1 teaspoon ground cinnamon
  • • 1 teaspoon vanilla extract
  • • Pinch sea salt
  • • ½ cup unsweetened coconut flakes
  • • Apple slices, strawberries, banana slices, and any other fruit for dipping
Preparation:

Combine the peanut butter, almond milk, honey, cinnamon, vanilla, and salt in a blender or food processor. Pulse until smooth, 1 to 2 minutes, scraping down the sides as necessary to incorporate all the ingredients. Add the coconut and pulse until well combined. (For a thinner, smoother consistency, add an additional 1 to 2 tablespoons almond milk with the coconut flakes.) Serve with fruit for dipping. Store in a sealed container in the fridge for up to 3 weeks.
