Fiery Buffalo wings are a summertime favorite. Beware: This finger-licking, deep-fried happy hour staple (with 2 tablespoons of bleu cheese dip) will set you back 1,270 calories. Instead, try this creative, diet-friendly spin. Think spicy chicken and veggie kebabs with all the flavor of the real thing…but for only 255 calories (dip included!).

These kebabs pair perfect with my Avocado Ranch Dip or Blue Cheese Dip.

This recipe makes 4 servings (2 kebabs each)
Ingredients:

Wooden skewers
⅓ cup favorite hot wing sauce
2 teaspoons butter, melted
¾ teaspoon paprika
¼ teaspoon cayenne pepper (optional; this can be very spicy!)
1 pound chicken tenders, cut into 2-inch cubes
1 head cauliflower, cut into 2-inch cubes

 

Preparation:

If using wooden skewers, allow them to soak in water for at least 30 minutes.

Preheat the grill.

In a small bowl, combine the hot sauce, butter, paprika, and cayenne pepper, if desired. Coat the chicken and cauliflower with sauce.

Assemble kebabs, alternating between chicken and cauliflower. You will probably get about 3 cubes of chicken on one skewer.

Carefully place skewers on hot grill; cook for about 5 to 6 minutes per side, until cauliflower is soft and chicken is cooked through.

Alternatively, you can prepare in the oven. Preheat oven to 450˚. Place coated skewers on a baking sheet on the center rack. Bake for 10 minutes, turn over once, and bake for another 10 to 15 minutes, or until chicken is cooked through and cauliflower is fork tender.
