The health world is abuzz over bone both. Although the food is a hot, new trend, we’ve known for years that broth (or stock) has healing properties. In fact, one study showed that chicken broth (in general) reduced inflammation and symptoms associated with upper respiratory tract infections because it helps clear mucus from nasal passageways and hydrates you.

You can use this tasty recipe as a base for your favorite soups or stews.

This recipe makes 5 Servings
Ingredients:
  • Bones from 1 chicken, all skin and fat removed
  • 6 carrots, peeled and chopped
  • 2 onions, peeled and chopped
  • 4 stalks celery, chopped
  • 6 cloves garlic
  • 1 tablespoon whole peppercorns
  • 1 bay leaf
  • Handful parsley
  • 24 cups (1½ gallons) water
Preparation:

Place all ingredients in a large pot and bring to a boil. Turn flame to low and simmer for 12 to 24 hours on the lowest heat (the longer you cook your broth, the more nutrients it will contain).

Add 2 to 4 cups of water every 6 hours.

When broth is done, strain in a fine mesh strainer into a bowl or container. Let it cool in the refrigerator and remove any fat that has risen to the top.

Broth can be used in soups, stews or sauces. You can also freeze it for several months.

Makes 5 cups; 1 cup per serving
