Whip out your slow cooker and prepare for a saucy sensation. In this health-ified rendition, I transform classic pulled pork sandwiches into leaner and lighter bite-sized sliders. The simple recipe entails a comfort food combo of pork tenderloin, sweet caramelized onions, flavorful seasonings and BBQ sauce—go ahead and use your favorite brand. Then, let the slow cooker work its magic to create irresistibly moist meat. When you’re ready to serve, simply shred the pork and build your sliders by adding the saucy meat with some creamy coleslaw on toasty whole-grain buns. And add whatever tasty toppers you like; I personally love a sunny side-up egg on top!

This recipe makes 32 to 36 sliders
Ingredients:

For the pulled pork

  • • 2 yellow or Vidalia onions, thinly sliced
  • • 3 pounds pork tenderloin, cut into 2 to 3 large pieces
  • • 2 ¼ cups barbecue sauce 
  • • 2 tablespoons Worcestershire sauce
  • • 1 teaspoon paprika
  • • ½ teaspoon garlic powder
  • • ½ teaspoon salt
  • • ½ teaspoon ground black pepper

For each sandwich

  • • 1 whole-grain slider bun 
  • • 1 heaping tablespoon store-bought or homemade coleslaw
  • • 1 optional sunny side-up egg
Preparation:

Liberally coat a large skillet with oil spray. Sauté sliced onions until browned and caramelized, about 8 minutes over low-medium heat, stirring occasionally.

Place the pork tenderloin in the bottom of a slow cooker.

Mix the remaining pulled pork ingredients in a small bowl. Pour the mixture over the pork in the slow cooker, add the sautéed onions, and stir to coat the pork completely. Cover and secure the lid. Cook on high for 4 hours or low for 7 to 8 hours.

When you lift the cover, the inside will be very watery. This is normal. Carefully lift out the pork, place it on a plate, and shred with two forks. Place all of the shredded pork back into the slow cooker and combine with the saucy liquid and mix until all the liquid is absorbed. Season with additional salt and pepper to taste.

To assemble each sandwich, place ¼-cup scoop of saucy pork on a lightly toasted whole-grain slider bun and top each with 1 heaping tablespoon coleslaw. Cover with the top half of the slider bun.
