This is one of my go-to recipes when I have ripened bananas in the house and my kids gobble them up. These pie shots are sweet and creamy, and a guaranteed hit at any get-together. Plus, they’re served in shot glasses, so they’re pleasing to your eyes, your tastebuds, and your waistline (did I mention each one is only 45 calories?!). It’s a good time to go bananas!

This recipe makes about 8-10 shots
Ingredients:
  • • 1 ripe large banana
  • • ¾ cup vanilla low-fat yogurt (traditional, not Greek)
  • • ¼ teaspoon vanilla extract
  • • 6 graham cracker squares, finely crumbled
  • • Aerated whipped cream, optional
Preparation:

Mash banana in a bowl and mix in the yogurt and vanilla extract. (If banana is not very ripe, peel and microwave for about 30 seconds before mashing with yogurt). Cover and chill in refrigerator for at least 30 minutes or until right before serving.

Once yogurt-banana mixture is chilled, add 1 tablespoon to the bottom of each shot glass and sprinkle on graham crackers. Layer on another tablespoon of banana filling and sprinkling of graham cracker. Add a squirt of optional whipped cream.
